2014 Shiraz

Grapes for this wine were grown on our own Nindethana vineyard situated at McLaren Flat on the eastern side of McLaren Vale.

The grapes were machine harvested at 6 a.m on 15th. March 2014. The picking time was chosen to ensure grapes were not picked in the heat of the day.

Grapes were fermented in open fermenters with continuous gentle agitation of the cap and pumping over twice per day. Fermentation temperatures were kept at approx. 24 deg. C.

After fermentation on skins for five days, the juice was run off the skins at 3.5deg. Beaume. The skins were pressed in a basket press and the pressings were returned to the free run wine.

After malo-lactic fermentation was completed the wine was aged in American and French oak hogs heads for twelve months prior to bottling.

This wine is big full-bodied and soft. Characterised by fruit flavours of blackberry and plums, laced with black pepper on the nose and palate, with a lean firm acid/ tannin structure helping to round out the finish.

I recommend that this wine be cellared for 3 to 5 years prior to drinking.

An ideal accompaniment with roast meats, grilled steak etc. and is particularly suited to full flavoured hard cheeses.
